Hawaiian Chicken with Bacon-Wrapped Asparagus
2 4-6oz Boneless, Skinless Chicken Breast
2 tbsp Hawaiian Flavored Marinade
20 Asparagus Spears, ends chopped off
6 Slices of Turkey Bacon
Salt and Pepper
No Calorie Spray Butter
No Calorie Cooking Spray
**Optional Garnish Ingredients: Pineapple Tidbits and/or Fat Free Shredded Mozzarella Cheese
- Preheat oven to 425 degrees. Spray a baking dish with cooking spray and place chicken breasts in dish. Top each breast with 1 tbsp Hawaiian flavored marinade. Bake in oven for 30 minutes.
- Meanwhile, take 10 spears of asparagus (make sure ends are cut off at the bottom) and bundle together. Wrap three bacon slices around asparagus bundle, as seen in the picture, and fasten each with a toothpick. Repeat with remaining 10 asparagus spears. Spray each bundle with 10 squirts of spray butter. Place in a sprayed baking dish and bake at 425 degrees for 20 minutes.
- Place on serving plates and garnish chicken with cheese or pineapple. A great option for the asparagus is a little salt, pepper, spray butter, and cheese.
