500 Calories or Less Meal Ideas
Chicken & Strawberry Salad – 370 Calories
1 lb Chicken Breast
1/4 cup Reduced-Sodium Chicken Broth
1/4 cup Fat Free Poppy Seed Dressing (I use Maple Grove Farms of Vermont’s – only 35 calories per serving!)
2 cups Fresh Baby Spinach
1 cup Torn Romaine
1 cup Sliced Strawberries
1/4 cup sliced almonds, toasted
Directions:
1. Preheat oven to 450 degrees. Line a baking dish with heavy-duty foil so there is enough hanging over the edges to fold over and almost cover the whole baking dish. In a small mixing bowl, combine broth and 1 tbsp poppy seed dressing. Place chicken in baking dish. Spoon poppy seed and broth mixture over chicken. Fold edges of foil around chicken mixture, leaving center open. Bake for approximately 30 minutes. Check chicken to make sure center is no longer pink. If you use a thermometer it should be cooked to an internal temperature of 165 degrees.
2. Take chicken out of baking dish and slice into several pieces.
3. In a large bowl, combine spinach, romaine, and strawberries. Add the chicken and remaining poppy seed dressing; toss to coat. Sprinkle with almonds. You could also sprinkle a little shredded parmesan cheese to top, but make sure only to use a little. Even just 1/4 cup of parmesan cheese could add 120 calories, however, even if you did use a whole 1/4 cup you would still be under 500 calories, or you could use half of that to only add 60 more calories.
