Delicious Sides – Creamy Garlic Mashed Cauliflower

 

In our household, we’re always looking for creative, yet healthy sides to have with our lean protein. I don’t want my boys to get bored with the same old vegetables every time, so I love experimenting with simple ways to spice up our usual side items. Simple is key to keeping it low calorie. The biggest mistake many people make that are trying to lose weight or stay healthy is adding too many high calorie ingredients to what would normally be a healthy meal. This is why many people have a hard time taking off the weight and keeping it off…they think they are being healthy, but are actually adding hidden calories to everything they eat. A side item should not hold an abundance of calories…it should simply add to the flavor of your favorite main dish or lean protein. We love mashed potatoes in our house, but knowing that they are loaded with carbs and many unwanted calories when spiced up, I went looking for a healthier alternative. Creamy and loaded with flavor, Creamy Garlic Mashed Cauliflower is a favorite in our household….and healthy!

Creamy Garlic Mashed Cauliflower

A healthy, creamy, and satisfying alternative to mashed potatoes.

16 oz package Frozen Cauliflower

2 cloves Garlic, minced

1 container (5-6 oz) Greek Yogurt

¼ cup Shredded Fat Free Cheddar Cheese

1 Green Onion, chopped

Salt and Pepper to taste

No Calorie Spray Butter

Directions:

  1. Prepare cauliflower according to package directions. Drain excess water.  Pour into a food processor or blender and puree until smooth.  Pour back into saucepan and turn heat to medium-low.

  2. Add garlic, Greek yogurt, cheese, onion, salt and pepper, and 20 squirts of butter. Combine well over low heat until cheese is almost or completely melted.

  3. Serve with your favorite lean protein. Goes great with pork tenderloin or skinless chicken breast.

Serves 2-4
