One of my favorite lunch and picnic foods during the summer is chicken salad. Either in a wrap or on fresh bread, this meal is full of an assortment of savory flavors while being light enough to allow you and the kids to keep playing at the park after enjoying its delicious flavors. Unfortunately, “light” doesn’t describe the nutritional content of chicken salad. Here is a figure and heart friendly recipe that lets you enjoy the chicken salad you love, without sacrificing your healthy diet:
Greek Yogurt Chicken Salad
In a medium-sized mixing bowl, combine 2 cups cooked chicken (I use the packaged and pre-cooked Hormel Natural Choice Carved Chicken Breast. They are already in strips. You just need to cut the strips into cubes…very easy!), ¼ cup diced celery, ¼ cup dried cranberries, 5 – 6 oz container of Greek Yogurt (Vanilla or Plain…I like vanilla in this recipe and am very excited about Light-n-Fit’s new Greek Yogurt with only 80 Calories), 1 tbsp fat free mayonnaise, ¼ tsp salt, and ¼ tsp pepper.
Place 4 La Tortilla Factory Smart & Delicious Low Carb Tortillas (only 80 calories!) in the microwave for 25 seconds. This makes them more pliable and easy to roll. Lay one leaf of romaine lettuce on one side of each tortilla. Divide the chicken salad evenly between all four tortillas. Spoon the salad on top of the romaine lettuce leaf on each tortilla like shown in the picture below, and then add sprouts and shredded carrots.
Fold in edges and roll into a tight wrap. Insert a toothpick on each side and cut in half diagonally. Serve with a side of mixed fruit and enjoy! A tasty and healthy meal that is perfect for those busy summer days and one you can feel good about feeding your kids and yourself!
Greek Yogurt Chicken Salad Wrap
2 cups cooked Chicken, cubed
1/4 cup Celery, diced
1/4 cup Dried Cranberries
1 5-6 oz container Greek Yogurt (vanilla or plain)
1 tbsp Fat Free Mayonnaise
1/4 tsp Salt
1/4 tsp Pepper
Romaine Lettuce
Shredded Carrots
Sprouts
Directions:
1. In medium bowl, combine chicken, celery, dried cranberries, yogurt, mayo, salt, and pepper.
2. Put four tortillas in the microwave for 25 seconds. Place one romaine leaf on one side of each tortilla. Divide the chicken salad evenly between the four tortillas, spooning the salad on top of the lettuce. Add shredded carrots and sprouts to taste.
3. Fold in edges of tortillas and roll into a tight wrap. Insert a toothpick on each side of the wrap and cut diagonally at the center of the wrap and serve! Goes great with a side of mixed fruit.
