I love pizza! Unfortunately, this mouthwatering pie that has become an American favorite is not the healthiest or most diet friendly meal. Many times the ingredients on top of the pizza aren’t too bad for you (if the cheese isn’t overdone), its the crust that adds many unwanted calories. So why not make a crust that tastes good, but is healthy, as well? I’m always looking for ways to try to eat more super foods. Knowing that Spinach is one of them, it has become a huge part of my diet…so why not make a pizza crust out of it? Here’s a pizza pie to enjoy that you don’t have to feel guilty about!
Skinny BBQ Chicken Pizza
Using a food processor or blender, add 1/2 cup Egg Beaters, 1/2 cup Flaxseed Meal, 6 cups Baby Spinach, 2 tsp Italian Seasoning, and salt & pepper to taste. Puree until you have a smooth, thick batter. Cover a pizza pan or stone with parchment paper or aluminum foil. Spray well with no calorie cooking spray. Pour batter in the center of pan and spread to look like the picture below.
If you can’t stand the look of the green crust or just want to change the flavor up, another great alternative to Spinach is Cauliflower. Simply use a head of cauliflower or a 16 oz package of frozen cauliflower and prepare or steam until tender. Then add to food processor or blender with other ingredients and prepare as directed above.
Bake crust 20 minutes at 450 degrees. While crust is cooking, pour chicken into a small mixing bowl and break apart with a fork. Add barbeque sauce and combine until all chicken is coated. Remove crust from oven and top with barbeque chicken, 1/2 cup cheese, red onion, and the rest of the cheese (1/4 cup). Bake 10-15 minutes. Slice and serve!
Skinny BBQ Chicken Pizza
6 cups Baby Spinach (or a head of cauliflower or 16 oz frozen package – great alternative to change up the taste)
1/2 cup Flaxseed Meal
1/2 cup Egg Beaters
2 tsp Italian Seasoning
Salt & Pepper
10 oz can of Light White Chunk Chicken Breast packed in Water, drained
1/2 cup Low Sodium Barbeque Sauce
3/4 cup Reduced Fat or Fat Free Mozzarella Cheese
Red Onion, thinly sliced
No Calorie Cooking Spray
Directions:
1. In a blender or large food processor, puree Egg Beaters, flaxseed meal, spinach, and seasoning until smooth.
2. Cover a pizza pan with aluminum foil or parchment paper and spray well with cooking spray. Pour batter in center of pan and spread out. Bake crust at 450 degrees for 20 minutes.
3. Meanwhile, break up chicken chunks in a medium bowl until well shredded. Coat with barbeque sauce. When crust is done, top with barbeque chicken. Then cover with 1/2 cup cheese, red onion slices, and then the remaining 1/4 cup cheese. Bake 10-15 minutes. Slice and Enjoy!
