I love being able to serve my family and guests something delicious to munch on as I’m preparing the meal. Appetizers are a great way to get the appetites going and to keep those you’re cooking for satisfied as they await that delicious meal you’re creating. The problem with a lot of appetizers these days is that they are loaded with calories and too filling. By the time you get to the real meal, many times you’re already halfway full. An appetizer should be light and something that gets the palate ready for what is to come. Here is a low calorie, healthy, and delicious appetizer idea that would work perfect for a busy weeknight, an elegant hor o’doeurve when hosting guests, a healthy snack for the kids, or a creative finger food for a weekend picnic or potluck.
Appetizers! – Parmesan Zucchini
2 cups Zucchini, sliced
2 tbsp grated Parmesan Cheese
20 squirts No Calorie Spray butter
Basil
No Calorie Cooking Spray
Directions:

Spray a baking sheet with cooking spray. Spread zucchini flat on baking sheet.

Sprinkle parmesan cheese evenly over zucchini. Spray with butter and top with basil to taste (you don’t need much, just a sprinkle).

Broil on high until cheese begins to brown. This should only take about 5 minutes.
