Salmon in a Spicy Red Pepper Sauce

I can’t seem to get enough salmon these days. With the abundance of nutritional and health benefits each fillet holds, I’ve been having fun experimenting with different ways to serve this heart healthy entree to my family. Here’s the latest and perhaps my favorite so far…

 

Salmon in a Spicy Red Pepper Sauce

4 (4-6 oz) Salmon Fillets

1 tbsp Lemon Juice

¼ cup Red Bell Pepper, diced

¼ cup Grated Parmesan Cheese

2 tsp Cornstarch

1 tsp Jalapeno Peppers, minced

1 clove Garlic, minced

¼ cup Cilantro, chopped

½ cup Reduced Sodium Chicken Broth

No Calorie Cooking Spray

Directions:

  1. Line a baking dish with aluminum foil and spray with cooking spray. Place fillets in a single layer and pour lemon juice evenly over all four fillets. Set aside.

  2. In a blender, puree red peppers, parmesan, cornstarch, jalapeno, and garlic.

  3. Add cilantro and chicken broth and blend.

  4. Pour pepper mixture evenly over all four fillets.

  5. Bake at 425 degrees for 20 minutes. Fish is done when it can be flaked easily with a fork. Serve with your favorite side of vegetables. Enjoy!
