I’ve already expressed my love affair with the avocado. On top of being packed with essential nutrients and omega 3’s, they’re also delicious. Being the mom of a toddler, I’m always trying to figure out creative ways to get him to eat more avocado. The following recipe was definitely a hit…not only for the little guy, but for mom and dad as well 🙂 Avocado Fries are crispy on the outside while being creamy and nutty on the inside.
Avocado Fries
½ cup Egg Beaters
¼ tsp Salt
¼ tsp Pepper
1 ¼ cups Whole Wheat or Italian Style Panko Bread Crumbs (both are delicious but whole wheat is a little healthier)
**For less crispy and a few less calories, cut the above ingredients in half**
2 Avocados, pitted, peeled, and sliced into spears (as seen in picture)
No Calorie Spray Butter
No Calorie Cooking Spray
Directions:

Preheat oven to 425 degrees. Spray one large baking sheet with cooking spray.

In a small bowl, combine Egg Beaters, salt, and pepper. Pour bread crumbs into a separate small bowl.

Dip each avocado spear into egg mixture and then into bread crumbs and lay flat on baking sheet.

Spray about 20 squirts of spray butter over all avocado spears on baking sheet. Bake at 425 degrees for 15-20 minutes or until bread crumbs begin to brown.

Serve with your favorite main dish. These go great with chicken brats or turkey burgers! Enjoy!
