Here’s a quick and easy meal idea that takes a favorite sports bar food and turns it into a slice of seafood heaven. Healthier than your typical pizza, this pie is sure to delight all who try it!
Freschetta Artisan Golden Wheat Pizza Crust – 2 per package (I love this crust because it tastes great and is so simple…just pull it out of the bag and it’s ready for toppings. If you only make one pizza, wrap the second crust in saran wrap or aluminum foil and freeze to be used at a later date.)
3 tbsp I Can’t Believe it’s not Butter Light
2 tbsp Whole Wheat Flour
¾ cup Skim Milk
¼ cup Reduced Sodium Chicken Broth
¼ cup Reduced Fat Shredded Monterey Jack Cheese
¼ cup Reduced Fat Shredded Swiss Cheese
¼ lb Uncooked Bay Scallops, chopped
10 Cooked Shrimp, thawed, detailed, and cut in half
¼ lb Imitation Crabmeat, chopped
2 cups Reduced Fat Shredded Mozzarella Cheese
1. Preheat oven to 425 degrees. In a large saucepan, melt 2 tbsp butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from heat.
2. In a large skillet, melt the remaining tbsp butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tbsp of the cheese sauce you just prepared in the saucepan. Remove from heat.
3. Take crust out of package and place on greased pizza pan or baking stone. Spread remaining cheese sauce over the crust. Top with the seafood mixture, sprinkle with mozzarella cheese and oregano. Bake for 12-15 minutes or until golden brown. I always broil my pizza for a few minutes at the end to get the top just a little brown. Let stand for 5-10 minutes before cutting.
Servings: 6-8 slices for 2-4 people
