One of my favorite sides to serve with our lean protein is asparagus. Healthy and delicious, this vegetable compliments just about any main dish. I also luck out because we live in the country and are often able to go out and find beautiful asparagus stalks in our ditches. There are so many great things you can do with asparagus, as suggested in my Bacon-Wrapped Asparagus Recipe, but I also like it cooked plain and then adding a few squirts of no calorie spray butter and some pepper to top it off. Here is another quick and easy way to serve this delicious green…
3 tbsp Olive Oil
1 bunch Fresh Asparagus
2 cloves Garlic, chopped
Grated Parmesan Cheese
1. Heat oil in a large skillet over medium-high heat. Add the garlic and asparagus spears. Cook for 10-15 minutes, stirring occasionally, or until asparagus in tender.
2. Place on serving plates and top with Parmesan cheese
