Cheesy Cauliflower Patties

One of my favorite meals of the day has always been breakfast. When I really feel like indulging, my favorite breakfast would have to be an omelet with cheesy hashbrowns on the side. Of course, we all know this is terrible for us, but tastes oh so good! Here is an easy substitute for the hashbrowns we all love using Cauliflower. This is a great recipe to use when entertaining company for the weekend as a side at breakfast or any other meal of the day!

 

Cheesy Cauliflower Patties

Cook a 16 oz bag of frozen cauliflower according to package directions. Drain and mash cauliflower while still warm. Stir in ½ cup Fat Free or Reduced Fat Shredded Cheddar Cheese, ½ cup Egg Beaters, ½ cup Whole Wheat Bread Crumbs, ½ tsp Cayenne Pepper, and salt to taste. Form the cauliflower mixture into 6 patties.

Spray the bottom of a griddle or skillet with No Calorie Cooking Spray. Cook each patty over medium-high heat until golden brown. Serve and Enjoy!!!

½ cup Whole Wheat Bread Crumbs

½ tsp Cayenne Pepper

Salt

No Calorie Cooking Spray

Directions:

  1. Cook cauliflower according to package directions. Drain and mash cauliflower while still warm.

  2. Stir in cheese, Egg Beaters, bread crumbs, cayenne pepper, and salt to taste. Form cauliflower mixture into 6 patties.

  3. Spray the bottom of a griddle or skillet with No Calorie Cooking Spray. Cook each patty over medium-high heat until golden brown.

Serves 6
