Vinegar Cucumbers

When I’m really watching my calories one of the most important things for me to do is to have healthy, low calorie snacks around the house that will prevent the hunger beast from making a ferocious entrance.  I have a garden in my backyard so having clean, fresh vegetables is something I try keep on hand at all times in our household.  Its especially important to me to expose TJ to as many fruits and vegetables as possible so he grows up loving them.

 

Here is one of my go-to snacks during the summer – Vinegar Cucumbers.  And at only 16 calories per 1 cup of cucumbers, how can you go wrong???

 

Vinegar Cucumbers

I made this batch without onions but love them even more with some cut up onions added!

 

**I just included the ingredients and no measurements because sometimes you may want to make a small bowl and other times you may want to make a party bowl :)**

 

Cucumbers, sliced

 

White Onions, sliced (optional)

 

Water

 

Vinegar

 

Salt

 

Pepper

 

 

Directions:

 

  1. Place sliced cucumbers and onions (if using them) in a bowl.  Fill bowl with water so top layer of cucumbers and onions are just covered.  Sprinkle with salt.  Using a spoon, stir water and cucumbers as best you can so salt mixes in water.  Soak for an hour.
  2. After an hour, drain salt water and fill bowl with 2 parts vinegar to 1 part water.  Sprinkle with salt and pepper to taste.  Stir to combine.
