Being a mom of a toddler, I understand how hard it can be to find the time to make a nice, home-cooked meal for the family, especially during the busy summer months. The problem with busy schedules is lots of times people resort to going out to eat or through drive thrus all too often. It is nearly impossible to find a healthy meal eating out. As a mom and wife to my two favorite boys, I want to take good care of them and myself so I’m always looking for quick meal ideas that are both healthy and delicious. Here is one that doesn’t take long, is delicious, and only has 172 calories!
Balsamic Glazed Tilapia with Pineapple

Healthy a delicious! And at 172 calories, by adding a low calorie side, you can have a meal for under 300 calories!
4 – 4 oz Tilapia Fillets
Lemon Pepper Seasoning
4 tbsp Balsamic Vinegar
2 cups Pineapple, diced
No Calorie Cooking Spray
Directions:
- Preheat oven to 425 degrees. Line a baking dish with aluminum foil and spray with cooking spray.
- Place fillets flat in baking dish and season with lemon pepper seasoning to taste (you don’t need a ton, just lightly sprinkle over the top of each). Pour 1 tbsp balsamic vinegar over each fillet. Then top fillets evenly with 2 cups diced pineapple.
- Fold edges of aluminum foil over top so there is just a little opening in the middle and bake fillets for 25 minutes. You will know the fish is done when it flakes easily with a fork.
- Serve with your favorite low calorie side, such as, vegetables, a salad, or low fat cottage cheese topped with cherry tomatoes.
