Caprese Garlic Bread

 

I LOVE garlic bread!  It can be used as a side for an abundance of meals or, when dressed up a bit, can be a great appetizer.  I’ve particularly fallen in love with Caprese Garlic Bread.  This mouthwatering combination of ciabatta bread, melted mozzarella, tomatoes, and balsamic vinegar is to die for.

 

Give this easy recipe a try.  It works great for the whole family or is a beautiful appetizer to compliment just about any dinner party.

Caprese Garlic Bread

 

1 loaf Ciabatta Bread, horizontally cut in half

 

4 tbsp Butter

 

3 cloves Garlic, minced

 

12-oz Mozzarella Cheese, sliced

 

½ cup Balsamic Vinegar

 

2 medium Tomatoes, sliced

 

Salt

 

Pepper

 

1/3 cup Basil, chopped

 

Directions:

 

  1. Preheat oven to 400 degrees.  Place both sides of bread on a large baking sheet with the cut sides up.

 

  1. In a bowl, combine butter and garlic and spread evenly on both pieces of bread.  Place the mozzarella cheese slices on top of the bread so that they go all the way across each half.

 

  1. Bake the bread for 15 minutes.

 

  1. Meanwhile, using a small saucepan, bring the balsamic vinegar to a boil.  Then decrease the heat to low and simmer, stirring occasionally, for 5-7 minutes.

 

  1. Once cheese is melted, remove the bread from the oven.  Top the bread with tomato slices.  Season with salt and pepper, to taste.  Sprinkle with fresh basil and drizzle with prepared balsamic vinegar.  Cut into slices and serve.
