One of my family’s favorite appetizers or snacks is crab salad. I love it spread on toasted bread or simply taking reduced fat Triscuits and dipping them in the salad. Here is an easy recipe that doesn’t take long, tastes great, and is something you don’t have to feel too bad about feeding your family.
Curried Crab Spread
1/2 cup Celery, diced
1/2 cup Green Bell Pepper, diced
1/2 cup Red Bell Pepper, diced
1/2 cup 1/3-less-fat Cream Cheese
1/3 cup Light Mayonnaise
1 tsp Curry Powder
1 tsp Hot Sauce
1/2 tsp Salt
1/2 tsp Grated Lemon Rind
1/4 tsp Dry Mustard
1/4 tsp Black Pepper
1 lb Crab Meat
36 slices Ciabatta Bread
1 tbsp Olive Oil
Directions:
- Combine the first 11 ingredients in a large bowl, stirring until well combined. Gently fold in crab meat.
- Place bread slices in a single layer on a baking sheet. Brush 1 side of the bread slices evenly with the olive oil. Broil 1 minute or until lightly browned.
- Serve with spread.
