Nothing beats a warm, creamy casserole. Unfortunately, these dishes can be packed with lots of unwanted calories that are far too unkind to our waistlines. Over the past few days I’ve been craving a meal with a good mix of ingredients covered in cheese and cream of something.
Last night I decided to scale down a traditional casserole and include as little of the high calorie ingredients as possible. This simple 5 ingredient (plus salt and pepper) dish is easy to throw together and low in calories without sacrificing taste. The great thing about this recipe is you can have some fun with it by switching up which vegetable you use (maybe use cauliflower or carrots instead of broccoli), use a different kind of cream soup, use a different flavor of cheese, or even use steak instead of chicken. **This recipe makes enough to serve 3-5 people. I served ours by itself so only got 3 servings out of it. If you are serving it with something else, such as, a salad or cottage cheese you may be able to get 5 servings from this recipe. 3 servings = 354 calories. 4 servings = 266 calories. 5 servings = 213 calories**
6 cups Fresh Broccoli
6 (3 oz) Chicken Tenderloins
1 cup Fresh Sliced Mushrooms
1 (10.75 oz) can Cream of Chicken Soup (I used Campbell’s Healthy Request at only 60 calories per serving)
1/4 tsp Salt
1/4 tsp Pepper
1/2 cup Shredded Mozzarella Cheese
Preheat oven to 425 degrees.
Cut tenderloins into small bite size pieces.
Using a large mixing bowl, add broccoli, chicken, mushrooms, soup, salt, and pepper. Stir to combine.
Spray a 9×13 casserole dish with cooking spray. Pour mixture evenly into baking dish. Top with cheese.
Bake 25-30 minutes.
