Wine & Tomato Braised Chicken

As some of you may have noticed, my posts have tended to get fewer and farther between.  Once spring arrives and golf season is here things tend to pick up around our household with less time spent indoors and more outdoor chores and activities, which makes finding time to write-up my recipes a little harder.  Along with that, I tend to do much simpler recipes in the spring and summer.  Lots of lean proteins on the grill with salads and veggies.  I’m hoping to expand my summer recipes quite a bit in the upcoming months so hopefully I’ll have time to share some new healthy and delicious ideas with all of you.

One way of cooking a lot of people neglect during the warmer months of the year is the crock pot.  I make it a goal to try to continue Crock Pot Wednesdays even through the summer months.  There are so many light and healthy recipes you can create in the slow cooker, even during the warmer months of the year.  I particularly like using it because I can prepare the meal while T.J. is  napping and play outside with him or go to the golf course or park right up until suppertime. Then all we have to do once we come in or arrive home is serve it up.

Last week I tried a new recipe – Wine & Tomato Braised Chicken.  This low-calorie meal was a wonderful way to end our day.  Perfect for summer, this chicken dish will please your taste buds while still being kind to your waistline.  Enjoy!

Here’s what you’ll need on your grocery list:

**This recipe makes enough to serve 4 people**

2 slices Turkey Bacon

1/2 Onion, chopped

2 cloves Garlic, minced

1/2 tsp Oregano

1/2 tsp Pepper

1 Bay Leaf

1/2 cup dry White Wine

1 (14.5 oz) can Diced Tomatoes

1/2 tsp Salt

4 (6 oz) Chicken Breasts

Optional Garnish: 1/4 cup Fresh Parsley, chopped

Spray a skillet with cooking spray and cook bacon in a large skillet over medium heat until crisp.

Transfer bacon to paper towels and let cool.

Spray a little more cooking spray in the same  skillet the bacon was cooked in, add onion and cook over medium heat until translucent.

Add garlic, oregano, pepper, and bay leaf and cook, stirring for 1 minute.

Add wine, bring to a boil and boil for 2 minutes.

Add tomatoes and salt.  Stir to combine.

Place chicken in crock pot and crumble bacon over breasts.

Pour tomato mixture over chicken.

Cook on Low 5-6 hours.

Remove bay leaf and serve over a bed of rice or with a side of vegetables.  Enjoy!
